पानी पूरी बनाने की सरल विधि

पानी पूरी का जायका बूढ़े, बच्चे और जवान आधी के द्वारा बेहद पसंद किया जाता है क्योकि इसका स्वाद बेहद ही चटपटा होता है जिसका नाम सुनते ही मुंह में पानी आ जाता है लकिन  इस रेसिपी को घ्जर पर बना कर आसानी से बना कर खाया जा सकता है . हमारा आज का टॉपिक इसी रेसिपी को लेकर है चटपटे स्वाद की पानी पूरी को अपने हाथों से बनाकर घर पर खाएं.

  • रेसिपी क्विज़ीन : इंडियन
  • कितने लोगों के लिए : 1 - 2
  • समय : 1 से 1.5 घंटे
  • मील टाइप : वेज

 

  • एक कप सूजी (रवा)
  • आधा छोटा चम्मच बेकिंग पाउडर
  • आधा छोटा चम्मच नमक
  • एक चम्मच तेल
  • एक बड़ा चम्मच मैदा

भरावन के लिए

  • 2 उबले आलू कटे हुए
  • आधा कप उबले काबुली चने
  • आधा कप प्याज कटा हुआ
  • एक बड़ा चम्मच धनियापत्ती बारीक काट लें
  • एक चम्मच भुना हुआ जीरा पाउडर
  • एक चम्मच चाट मसाला
  • स्वादानुसार काला नमक
  • 1/4 छोटा चम्मच लाल मिर्च पाउडर

 

पानी के लिए

  • आधा कप पुदीने के पत्ते बारीक कटे हुए
  • आधा कप धनिया पत्ते बारीक कटे हुए
  • एक छोटा चम्मच अदरक कद्दूकस किया हुआ
  • एक चम्मच इमली का पेस्ट
  • एक हरी मिर्च बारीक कटी हुई
  • 2 बड़े चम्मच गुड़ कद्दूकस किया हुआ
  • एक चम्मच भुना हुआ जीरा पाउडर
  • एक चम्मच चाट मसाला
  • स्वादानुसार काला नमक


विधि

कटोरे में सूजी, नमक, मैदा, बेकिंग पाउडर डालकर अच्छी तरह मिला कर रख लें.
इसके बाद मैदा एवं सूजी के मिश्रण में थोडा सा सरसों का तेल या रिफाइंड तेल और जरूरत के मुताबिक पानी डालकर आटे की तरह भलिभांति गूंथ लें.
इसके बाद आटे को गीले कपड़े से ढककर कर 30 मिनट के लिए रख दें.
30 मिनट बाद आटे से एक नींबू के बराबर की लोई बनाएं. फिर लोई से पतली रोटी बेलें.
अब एक छोटे ढक्कन से रोटी में से गोल-गोल पूरी काट लें. इन पूरियों को निकाल कर प्लेट में रखते जाएं. इसी तरह पूरे आटे में से पूरियां तैयार कर लें.
गैस पर कड़ाही में तेल गर्म कर लें. फिर गरम तेल में एक साथ 5 से 6 पूरियां डालकर तलें. पूरियों को कलछी से तेल में थोड़ा दबा कर फुलाएं.
पूरियों को पलटकर गोल्डन ब्राउन होने तक फ्राई करके प्लेट में निकालें. जब तक पूरी ठंडी न हो जाएं इन्हें खुला रखें.
पानी पूरी के लिए पूरियां तैयार हैं.

पानी पूरी के लिए चटपटा भरावन और पानी बनाने की विधि -

एक कटोरे में उबले हुए आलू, प्याज, धनिया पत्ते, चाट मसाला, भुना हुआ जीरा पाउडर, काला नमक और लाल मिर्च पाउडर डालकर, सारी सामग्री अच्छी प्रकार से मिला लें.
इसके बाद पुदीने के पत्ते, हरे धनिया के पत्ते, अदरक, कच्ची इमली की चटनी , गुड़, हरी मिर्च, चाट मसाला, भुना हुआ जीरा पाउडर और काला नमक मिक्सी में पीसकर पेस्ट तैयार कर लें.
इस पेस्ट को 4 कप पानी डालकर मिक्स करके छान लें.
लीजिए तैयार है पानी पूरी. अब फूली हुई पूरी को बीच से अंगूठे की सहायता से फोड़कर उसमें थोड़ा आलू का भरावन डालकर, पानी भरकर खाएं और अपने मित्रो, सहेलियों को भी खिलाएं.
